This Stuffed Gatte Ki Sabzi is a yummy twist on a traditional Rajasthani dish which is prepared with steamed gram flour and spices in a creamy gravy. Give this popular recipe a try today! Ingredients: For the steamed gatte – Besan/Gram flour, 2 cups Salt, 1/2 tsp Red chilli powder, 1/2 tsp Turmeric powder, 1/2 tsp Garam masala, 1/2 tsp Hing/Asafetida, 1/2 tsp Curd, 1/2 cup Paneer, 1 cup Black pepper powder, 1 tsp Coriander leaves, 2 tbsp For the Gravy – Oil, 3 tbsp Cumin seeds, 1 tsp Hing, 1/2 tsp Onion paste, 1 cup Ginger garlic paste, 1 tsp Salt, to taste Turmeric powder, 1/2 tsp Red chilli powder, 1/2 tsp Coriander powder, 1/2 tsp Garam masala, 1/2 tsp Curd, 1 cup Water, 1 cup Method: Place the besan in a large bowl. Add salt, red chilli powder, turmeric powder, garam masala, hing and curd. Mix together to make a soft dough. Roll out the dough. Spread grated paneer, black pepper powder and coriander leaves on the dough. Roll up the dough with the stuffing very tightly. Seal the edges to make a tight cylinder. Steam the stuffed gatte for 10 minutes or until done. Cut them into thick slices, and set aside until needed. For the gravy, heat oil in a wok. Add cumin seeds, hing, and onion paste. Saute the mix then add ginger garlic paste, salt, turmeric powder, red chilli powder, coriander powder, garam masala and saute. Add curd and continue sauteeing until the mix thickens and oil is released. Now add water, mix well and bring it to a boil. Add the sliced gatte, and cook until done.
