Dahi Turai Ki Sabzi | Tori Ki Sabzi | दही तुरई की सब्ज़ी | Summer Veg Recipe | Food Tak

Ingredients: Curd, 1 cup Besan, 1 tsp Oil, 2 tsp Hing/Asafetida, 1/4 tsp Kalonji/Nigella seeds, 1/2 tsp Bay leaves, 2 Green chillies, 1 tbsp Onion paste, 1 cup Tomato puree, 1 cup Turai/Ridge gourd, 250 g Salt, to taste Turmeric powder, 1/2 tsp Coriander powder, 1/2 tsp Garam masala, 1/2 tsp Ghee, 1 tsp Cumin seeds, 1/2 tsp Cinnamon sticks, 2 Dry red chilli, 3 Method: Mix together curd and besan in a bowl until there are no lumps. Set aside until needed. Heat oil, and add hing, kalonji, bay leaves and green chillies. Let them splutter, then add onion paste, tomato puree and saute. Once this mix releases oil, add the curd mix and continue sauteeing. Add turai, salt, turmeric powder, coriander powder, garam masala and mix well. Cook the sabzi until done. For the phoran or chhaunk, heat ghee in a pan. Add cumin seeds, cinnamon sticks, dry red chillies and let them crackle. Pour the tempered spices on the curry and serve.20and set aside until needed. For the gravy, heat oil in a wok. Add cumin seeds, hing, and onion paste. Saute the mix then add ginger garlic paste, salt, turmeric powder, red chilli powder, coriander powder, garam masala and saute. Add curd and continue sauteeing until the mix thickens and oil is released. Now add water, mix well and bring it to a boil. Add the sliced gatte, and cook until done.
